Earlier this month a new café opened in Canton catering to a specific clientele.

Mean Green Cuisine is the product of Canton High School’s culinary arts program.

“Our goal is to have a cafe in the high school to serve teachers and staff, create a to-go meal business for district employees, and to run a catering business in the district and the community,” said culinary arts instructor Tonya Burton.

Students prepare the meal – from start to finish – and serve it.

“Our plan is to serve lunch once a week to teachers and staff, the next week to offer evening meals and do catering,” Burton said.

This is the first year CHS has offered culinary arts and Burton’s first year at the school. A resident of Quinlan, Burton holds a degree in vocational home economics education from Texas Tech University and has 16 years teaching experience.
